Greek Recipe - Orange Preserve - The sweet spoon
Sweet of TableSpoon
This sweet recipe is also called in many countries as TableSpoon sweet. It can be done from many types of fruits and even from vegetables. In the countries of formal Soviet Union people used to prepare and store Sweet Preserve for cold days of winter. This type of sweet is usually being consumed with tea or coffee.
You can prepare it from all type of fruits and following vegetables:
- Eggplant
- Watermelon
- Tomatoes

Yields: 600-700 g
Ingredients
- 5 oranges
- 1kg sugar
- 1/2 teaspoon lemon juice
Instructions
- Wash the oranges well. Make sure there is no soil or dust left.
- Boil oranges on low heat for about one hour, so they become soft.
- Cut both edges of each orange and divide in two. With a sharp knife cut the oranges into slices (2,5-3 cm)
- It's wise to weight the oranges and place them into the pot. Add exactly the same weight of sugar.
- Once sugar is melted , add lemon juice, place the pot on low heat and let it boil. When stirring the sweet be careful not to harm the orange pieces. Once the syrup is thick, remove it from the heat. Let the dessert get cold. Then place it in a 1litre jar.
- Consume with ice-cream, yogurt or with cup of tea.
